Usually yes beyond two rooms, because one condenser serves them all — you save on the outdoor unit and on external wall penetrations, though the pipe runs get longer. The break-even is usually around three rooms: for two rooms close together, two standalone splits can come out level or slightly cheaper, but from three heads up the shared condenser almost always wins on both price and the number of holes in your walls.
Yes, each indoor head has its own control. On a standard multi-split all heads must be in the same mode — all cooling or all heating. Independent room-by-room mode needs VRF, which runs £8,000–£20,000 for a whole house. For most homes the same-mode limit is a non-issue in practice, since you are almost always either cooling the whole floor in summer or taking the chill off in a cold snap, not cooling one room while heating the next.
Domestic multi-splits typically run two to five heads. Beyond that, or across more than one floor with long runs, an installer will normally propose VRF or a second condenser.
